These mushrooms would make a fantastic Thanksgiving or Christmas side dish, as they’re perfect at room temperature – no need to perfectly time all of your dishes! For an easy dinner, spread ricotta on a great slice of toast and pile these mushrooms high on top.
Roasted Rosemary Mushrooms
Ingredients
- 1 pound mixed mushrooms
- ¼ cup olive oil
- 6 sprigs rosemary
- ¼ tsp salt
- 1/8 tsp freshly cracked black pepper
Instructions
- Preheat oven to 400°.
- Place all ingredients on a baking sheet and toss to combine. Spread evenly on baking sheet.
- Roast for 25-30 minutes, stirring occasionally until tender and just starting to crisp.
- Remove from oven and discard all but one sprig of rosemary. Transfer mushrooms to a serving platter and garnish with rosemary. Serve warm or at room temperature.
