Animal Style Steak and Potatoes (Whole30 Approved!)

Honestly, I’ve outdone myself. Garlic-butter (er, ghee) coated steak and crispy potatoes, tossed with perfectly caramelized onions and dunked in In-N-Out style special style. This, folks, is delicious.

Animal Style Steak and Potatoes

Ingredients

  • 1 1/2 tbsp olive oil 
  • 1 large yellow onion, diced
  • 1 1/2 pounds fingerling potatoes, halved
  • kosher salt
  • 2 large sirloin steaks, cut into 2-inch cubes
  • freshly ground black pepper
  • 1/2 tsp garlic powder
  • 1/3 cup mayonnaise
  • 2 tbsp ketchup
  • 1 1/2 tbsp pickle relish 
  • 1 tsp yellow mustard 
  • 2 tbsp ghee, divided
  • 2 garlic cloves, grated or minced
  • 3 tbsp finely chopped parsley 

Instructions

  • first things first, get your caramelized onions started. caramelizing onions properly is a long slow process. add the oil and onions to a large skillet over medium-low heat. if they ever start to burn, just turn the heat all the way to low. cook for about 30 minutes, stirring every few minutes, by which time your steak and potatoes will be ready! stir in a pinch of salt at the very end.
  • place potatoes in a 12-inch skillet (preferably cast iron) and cover with water. add 1/2 tsp salt and bring to a boil over high heat. reduce to medium and cover. cook for 15 to 20 mins, until potatoes are easily pierced with a fork. 
  • remove the cover and pour off the water. 
  • while the potatoes are boiling, season steak with a big pinch of salt and pepper, and garlic powder. set it out come to room temp on a paper towel lined plate. pat the tops dry with a paper towel.
  • also while the potatoes are boiling, stir together the mayo, ketchup, relish, and mustard. set aside.
  • return the potato skillet to medium-high heat and quickly toss the potatoes with 1 tbsp of the ghee to coat. allow them to sit undisturbed so they can brown for 3 to 4 minutes, then toss and allow to sit undisturbed for another 4 minutes or so. they might get stuck to the skillet and the peels might start to come off, no worries. they’re going to be delicious. transfer the potatoes to a holding plate.
  • scrape out the skillet with a metal spatula if there are potato bits stuck to it. get the skillet really hot again over medium-high heat, add the second tbsp of ghee, then add the steak bites in a single layer. cook for 2 minutes, then flip and cook for an additional minute. add the potatoes and garlic to the skillet and toss to cook the garlic and coat everything in garlic-ghee.
  • stir in 2 tbsp parsley and most of the caramelized onions. use the remaining parsley and onions for garnish. 
  • dig straight into the skillet, or divide between 2 to 4 plates. (2, if this is all you’re eating, 4 if you’re having a salad or other sides). serve with special sauce.
