SOFT & CHEWY CHOCOLATE PEPPERMINT M&M COOKIES
Ingredients
- 1 cup flour
- 1/3 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, room temperature
- 3/4 cup dark brown sugar
- 1 large egg
- 1 tbsp vanilla extract
- 3/4 tsp peppermint extract
- 1 (9.9 ounce) bag holiday mint mms
- Optional: more mms or crushed peppermint candies
Instructions
- Preheat oven to 350F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, cocoa powder, baking soda and salt.
- In the bowl of a stand mixer, cream together the butter and sugar on medium-high speed for 3 minutes. Scrape down the sides as needed. Add egg, vanilla extract, and peppermint extract and continue beating until combined. Add m and ms and mix a couple more times on low to incorporate.
- Use a cookie scoop or spoon to scoop cookie dough 2 inches apart onto parchment-lined baking sheet. Smoosh cookies down with the back of the spoon. Place 3 mms on top or sprinkle crushed peppermint candies over top if desired.
- Bake for 8 to 10 minutes. I bake them for 9 and they still look VERY soft but firm up as they cool. Allow to rest for a couple minutes before transferring to a wire rack to cool completely.
