Trader Joe's sheet-pan Chicken Shwarma

Equipment

  • Large Rimmed Sheet-pan
  • Parchment paper

Ingredients

  • 1 package Trader Joe’s Chicken Shawarma Thighs If you don’t live by TJ’s, I have a chicken shawarma marinade below
  • 1 to 1 1/2 pounds baby potatoes
  • Kosher salt
  • 3 cups chopped kale try to remove any big thick stems
  • Cooking oil
  • Tzatziki buy the prepackaged kind - be good to yourself

Instructions

  • Preheat oven to 450f.
  • Toss package of chicken and the pound of potatoes on a rimmed sheet-pan. Use parchment paper or a silpat for easy cleanup. If the potatoes aren’t nicely coated by the end, add a tiny bit of oil. Season potatoes with a pinch of salt.
  • Roast for 20 minutes.
  • Toss 3 cups chopped kale onto the sheet-pan. Season with a smidge of oil and salt. Roast for another 15 minutes.
  • Serve with tzatziki - AND YOU’RE DONE!

Notes

No Trader Joe’s? Just grab 1 1/2 pounds of boneless skinless chicken thighs and toss together on a sheet pan with 2 tbsp oil, 1 1/2 tsp salt, 1 tsp turmeric, 1 tsp cumin, 1 tsp chili powder, 1 tsp paprika, 1/2 tsp cinnamon.
