One-Skillet Trader Joe’s Meyer Lemon Berry Cake

Equipment

  • 10 inch ovenproof skillet (nonstick or cast iron)
  • 12 inch will also work, your cake will just be thinner and bake for less time!
  • Spatula

Ingredients

  • 1/2 cup unsalted butter
  • 1 box Trader Joe’s Meyer Lemon Cake Mix
  • 1 cup milk whole! almond! oat! anything! or water
  • 1 large egg
  • Yolk from 1 large egg
  • 2 cups blackberries blueberries
  • 1 tablespoon white sugar

Instructions

  • Preheat oven to 350°F.
  • Melt butter in a 10-inch nonstick or cast iron skillet over medium heat for 5 to 7 minutes, until light brown in color. Let it cool down for 10 minus.
  • Stir in 1 box of TJ’s Meyer Lemon Cake Mix (set the glaze packet aside for later), 1 cup milk, 1 large egg, and 1 yolk from a large egg. Stir until smooth, then smooth the top. Add 2 cups of berries over the top, and then sprinkle sugar over the berries.
  • Bake for 35 to 45 minutes, until the center, is no longer gooey when you insert a toothpick or paring knife.
  • Let it cool down for 10 minutes. While it’s cooling, make the glaze per package instructions.
  • Drizzle the glaze over top and ENJOY!
