Balsamic Roasted Beet, Peach, and Goat Cheese Salad

Ingredients
2tbspbalsamic vinegar
2tbspextra-virgin olive oil
2tsphoney
pinch of salt
1poundstore-bought roasted beets (I love the pre-marinated kind that come in shrinkwrap in the refrigerated section!)
2largepeaches, cut into 1/4-inch thick wedges
1/2 cup small basil leaves
4ouncesgoat cheese, crumbled
Instructions
In a large bowl, whisk together the vinegar, oil, honey, and salt. Throw in the beets, peaches, and basil and toss to combine. Top with goat cheese and serve immediately.
