Preheat the oven to 375°F and line a baking sheet with parchment paper.
Unroll 4 of the crescent rolls onto the lined parchment paper, swipe with about 1/2 teaspoon grainy Dijon mustard, sprinkle with about 1 tablespoon cheddar cheese, and lay 1 piece of chicken sausage across the fat part of the crescent roll. Roll it up! I found it quite impossible to make these look uniform, but I promise they’ll all look equally delish once baked.
Repeat with the second half of the crescent rolls. Space the rolls at least 1 inch apart.
Spray the rolls lightly with cooking spray, then sprinkle with everything bagel seasoning.
Bake for 15 to 17 minutes, until golden brown and puffed up.
Meanwhile, stir together 2 tablespoons mayonnaise, 1 tablespoon grainy Dijon mustard, and 1 tablespoon honey in a small bowl to make the creamy honey mustard sauce.
