There is always, ALWAYS, a jar of pickled red onions in the fridge at my house. They make everything better – sandwiches, salads, grilled meat. They’re tangy and delicious and you have to try them.
Pickled Red Onions
Ingredients
- 1 large red onion, cut in half then sliced thinly
- 1/2 cup red wine vinegar
- 1 cup cup water
- 1 tbsp sugar
- 1/2 tsp salt
- Optional: 1/2 tsp mustard seeds, 1 bay leaf, jalapeno slices, 1 star anise
Instructions
- Stuff the onion slices and bay leafs into a large jar or heat-proof container. Bring the vinegar, water, sugar and salt to a boil. Pour vinegar mixture over then onions. Allow to sit for at least 30 minutes or up to two weeks before serving.

If I’m making these at least 24 hours in advance, I almost always skip the boiling step and just add all of the ingredients to a jar, shake, and stick it in the fridge!
