Avocado and Greek Yogurt Dip

When we lived in San Diego, we lived in a TINY one-bedroom house/studio/I don’t even know what to call it but let’s just say there were no doors that didn’t lead to the outdoors. But it was our first home together, and it was 5 blocks from Coronado Beach, the most beautiful beach in America (IMO), and it was perfect.

It definitely did not have air conditioning, so in the spring, summer, and honestly most of Fall, I avoided turning on the stove and oven as much as possible. Remember how we had no doors in the entire house? The oven didn’t just heat up the kitchen, it heated up the entire house.

Anyway, this dip. I made it ALL the time. We always, always have half of an avocado in the refrigerator, left over from eating half with scrambled eggs, or on a salad, or whatever the hell. There’s just always half of an avocado in there, threatening to turn brown and make me throw it out, and think about how I just wasted $2.

Avocado and Greek Yogurt Dip

This dip was born during those hot San Diego days, to use up the inevitable half of an avocado. It is easy, has only a few simple ingredients, and is just so damn delicious. It is HARD to photograph, man, but I hope you’ll make it!

Ingredients

  • ½ large Hass avocado (or 1 small avocado)
  • cup Greek yogurt
  • 1 scallion, finely chopped
  • 1 lime, halved
  • ¼ tbsp garlic powder
  • tbsp kosher salt

SUBSTITUTIONS:

  • Avocado You could definitely make a delicious Greek yogurt dip by using a full 1/2 cup of Greek yogurt and adding in a lot of finely chopped herbs to the rest of the ingredients!
  • Greek Yogurt Sour cream, labne, or any kind of plain yogurt.
  • Scallion I love the subtle onion-y bite that scallions add, but if you don’t have scallions, you could really really finely chop up about 1 tablespoon of any kind of onion and add that in. If the onion is REALLY making you cry when you chop it up, soak it in water first, before adding it, to mellow out how strong it is.
  • Lime Lemon juice or 1 tablespoon of a light colored vinegar.
  • Garlic powder This ingredient is pretty key, but if you don’t have any, add equal parts onion powder, or 1 small grated garlic clove.

Instructions

  • Add the avocado to a bowl and mash until smooth.
  • Stir in the yogurt, scallions, HALF of the lime juice, garlic powder, and salt.
  • Stir to combine.
  • Taste and add more lime juice or salt if needed.
  • Serve with cut up veggies, tortilla chips, pita chips, or whatever you like to dip with!
