Grilled Bell Peppers with Avocado and Feta

This is the ultimate summer entertaining recipe. Takes only minutes to throw together, but is absolutely gorgeous and full of flavor. Swap in corn (cut it off the cob after grilling it), fennel, asparagus, or whatever other summer vegetable you want to throw on the grill.

Grilled Bell Peppers with Avocado and Feta

Servings 4 to 6 people

Ingredients

  • 2 large bell peppers, cut into 1/2-inch slices
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1/4 tsp garlic powder
  • 1 to 2 tbsp apple cider or sherry vinegar
  • 1 large avocado, sliced
  • 4 ounces feta, crumbled
  • 1/2 cup thinly sliced fresh basil leaves
  • flaky sea salt, for garnish

Instructions

  • Preheat an outdoor grill to medium-high heat.
  • Toss the peppers, oil, salt, and garlic powder in a large bowl.
  • Grill for about 4 minutes per side, until charred all over.
  • Transfer to a serving platter. Drizzle vinegar all over the peppers. Scatter avocado slices, feta, and basil over top. Finish with flaky sea salt.
