Balsamic Roasted Beet, Peach, and Goat Cheese Salad

This is one of those recipes that feels silly to share because it’s just so simple, but it also feels crazy NOT to share because it’s SO. DAMN.GOOD. Full of flavor, so simple, and packed with summery goodness!

Balsamic Roasted Beet, Peach, and Goat Cheese Salad

Servings 2 to 4 people

Ingredients

  • 2 tbsp balsamic vinegar
  • 2 tbsp extra-virgin olive oil
  • 2 tsp honey
  • pinch of salt
  • 1 pound store-bought roasted beets (I love the pre-marinated kind that come in shrinkwrap in the refrigerated section!)
  • 2 large peaches, cut into 1/4-inch thick wedges
  • 1/2 cup small basil leaves
  • 4 ounces goat cheese, crumbled

Instructions

  • In a large bowl, whisk together the vinegar, oil, honey, and salt. Throw in the beets, peaches, and basil and toss to combine. Top with goat cheese and serve immediately.
