Summer Peach Margarita

When it’s peach season, I ALWAYS have peaches around. I throw ‘em in salads, I eat them with yogurt and granola, I make all kinds of desserts, and this summer, I’ve been making peach COCKTAILS like crazy. I’ve never loved making cocktails until this summer when of course… I’m super pregnant and can’t actually enjoy more than a few sips. C’est la vie! Baby will be out soon and I can’t wait to make myself a tall peach margarita when he is!

Be sure to use a super ripe, juicy peach to make this cocktail. If you can’t find one, you’ll need to add a bit of sugar or honey for sweetness.

Summer Peach Margaritaa – PITCHER SIZE

Servings 4 cocktails

Ingredients

  • 1 cup blanco tequila
  • 2 medium peaches, peeled and roughly chopped
  • Juice of 2 lemons
  • Juice of 2 limes
  • 1/4 cup triple sec
  • Optional: 12 mint leaves
  • Sugar, agave syrup or simple syrup to taste, if needed

Substitute

  • Tequila: vodka or bourbon would be great!
  • Peaches: swap in 1/4 cup of any type of berry for the 1/2 peach, or 1 full cup berries the 2 peaches in the pitcher size.
  • Lime: you can use lemons! Or an orange to make a sweeter margarita.
  • Lemons: you can use limes! Or use an orange to make a sweeter margarita.
  • Triple sec: any orange liqueur! If you don’t have it, you can omit, but it really does add a lot of great flavor
  • Mint: basil is also fun in a peach margarita!

Instructions

  • Add all ingredients to a blender and blend on high speed for 20 to 30 seconds, until no peach specks remain. Taste. If your peaches weren’t at their peak, the margarita may need to be sweetened. Add a touch of agave syrup or sugar if so.
  • Pour over a glass full of ice and serve with thinly sliced peaches and mint as garnish.

Notes

If the margarita is too thick for your liking, thin it out by blending in a bit more lime juice (if you think you’d like it more tart) or a tiny splash of water!
Non-alcoholic: Don’t blend in the booze. Fill the glass half full with peach puree, and half full with really bubbly club soda.
