
I grew up on my mom’s Curried Chicken Salad. It’s the perfect way to use up leftover chicken, or such an easy lunch to prep for the week using a rotisserie chicken from the grocery store.
Curried Chicken Salad
Ingredients
- 1/2 of a rotisserie chicken
- 1/4 cup mayonnaise
- 2 tablespoons Greek yogurt
- 2 tablespoons curry powder
- 1/2 teaspoon cumin
- Juice of 1 lime
- 2 celery stalks diced
- 10 red or green grapes quartered
- 2 tablespoons raisins
Instructions
- Grab your rotisserie chicken and shred half of it (one breast and one thigh + leg) into tiny shreds. Stir in 1/4 cup mayonnaise, 2 tablespoons of greek yogurt, 2 teaspoons of curry powder, 1/2 teaspoon of cumin, a splash of lime juice, or clear vinegar, 2 diced celery stalks, 10 quartered grapes, 2 tablespoons raisins. Season with salt and pepper to taste.
