Curried Chicken Salad

I grew up on my mom’s Curried Chicken Salad. It’s the perfect way to use up leftover chicken, or such an easy lunch to prep for the week using a rotisserie chicken from the grocery store.

  1. Greatly enhanced though a nice reminder of a time honored favorite that Mimi ❤️ actually created in the 80’s. Hers was, of course, laden with Mayo!

  2. What if I hate celery, anything I can sub for the crunch?
