5-Minute Honey Mustard Ham & Cheese “Crepe”

This is another one of those “can I really post this – it’s so easy!” recipes. But, I’d never thought to do this on my own until recently, and it is simply a fantastic little trick, so I want to share the knowledge. This has been the greatest snack, breakfast, and lunch during Quarantine when I don’t feel like cooking!

I use Siete tortillas here, which are grain free and come in an array of different “flavors” including cashew, cassava, and almond. The cashew tortillas are my favorite, so that’s what I used here. You can use absolutely ANY 8 to 10 inch tortilla to make these cheater-cheater quickie crepes, however.

5-Minute Honey Mustard Ham & Cheese “Crepe”

Servings 1 crepe

Ingredients

  • 1/2 tbsp unsalted butter
  • 1 Siete tortilla
  • 1 tsp grainy Dijon mustard
  • 1 to 2 tbsp blue cheese, crumbled (or whatever kind of cheese you have!)
  • 1 slice ham
  • 1 tsp honey
  • Optional: chopped fresh herbs

Instructions

  • Melt the butter in a nonstick skillet over medium heat. Add the tortilla and swirl to coat in butter. Smear the mustard down the center, then sprinkle desired amount of cheese over top, down the center of the tortilla.
  • Fold a slice of ham in half and place it over top. Drizzle honey over the ham, then sprinkle a tiny bit more cheese on top of the honey. Use your fingers and a spatula to fold the tortilla over the filling, from the left and right like an envelope, not in half. Use your spatula to hold the tortilla in place until it sticks to the honey and cheese.
  • Flip the crepe if you want to get it buttery and crispy all over.
  • Garnish with herbs if you’ve got ‘em!
