Walnut Banana Bread Steel Cut Oats – Pressure Cooker/InstantPot/MultiPot Recipe

This recipe was originally developed for mealthy.com but has been adapted based on the millions of times I’ve remade it!

I go through breakfast phases, and the current one is ALL ABOUT OATS, baby. I make a big batch of steel cut oats in my Mealthy MultiPot and enjoy eating them for days. I reheat them in a small pot with a splash of water or milk, and they’re ready in minutes!

This recipe is inspired by the warm, comforting flavors of banana bread… but with all the nutritional benefits that banana bread does not bring you.

Pressure Cooker Walnut Banana Steel Cut Oats

Servings 2 to 3 servings

Ingredients

  • 2 cups almond milk
  • 1/4 cup water
  • 1 cup steel-cut oats
  • 2 large bananas, roughly chopped, fresh or frozen
  • 1 tsp cinnamon
  • 1/4  tsp allspice
  • 1/4 tsp nutmeg
  • salt to taste
  • 1 tbsp ghee or unsalted butter
  • 1 tbsp coconut sugar
  • 2 tbsp chopped toasted walnuts

Instructions

  • Stir milk, water, oats, bananas, cinnamon, allspice, nutmeg, and a big of salt together in the inner pot of a pressure cooker.
  • Lock lid in place and turn steam vent handle to Sealing. Cook on High Pressure for 12 minutes for firmer steel cut oats, or 14 minutes for softer oats.
  • Turn steam vent handle to Venting to quick-release pressure. Remove lid and stir butter and brown sugar into oatmeal. Garnish with walnuts.
