Do you ever get that feeling at the end of a vacation that you need to go on vacation to recover from your vacation? That’s pretty much how I feel at the end of every long weekend.
For the record, that feeling quadruples when the weekend ends with a Sunday night Rolling Stones show during which you do not stop dancing for even half a second.
I was feeling the hurt this afternoon, and was desperate for a light and refreshing pick-me-up. My produce selection was sparse, but what I ended up throwing together was so fantastic and unexpected that I had to share it. Carrots, peaches and coconut water come together beautifully – color-wise and taste-wise – in this tropical smoothie. I sprinkled my smoothie with my new obsession, Coconut Bare Chips, but if texture in your smoothie freaks you out, feel free to omit.
Peachy Keen Carrot Smoothie
Ingredients
- 1/2 cup ice
- 1 cup 100% coconut water
- 1 large peach, quartered and pitted
- 1/2 large carrot or 1 small carrot, cut into 2-inch pieces, steamed
- 1/2 banana
Instructions
- Add all ingredients to a high-powered smoothie in the order listed. Blend until smooth. Enjoy immediately.
