SOFT & CHEWY CHOCOLATE PEPPERMINT M&M COOKIES
1 cup flour
1/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, room temperature
3/4 cup dark brown sugar
1 large egg
1 tablespoon vanilla extract
3/4 teaspoon peppermint extract
1 (9.9 ounce) bag holiday mint mms
Optional: more mms or crushed peppermint candies
Preheat oven to 350F. Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, cocoa powder, baking soda and salt.
In the bowl of a stand mixer, cream together the butter and sugar on medium-high speed for 3 minutes. Scrape down the sides as needed. Add egg, vanilla extract, and peppermint extract and continue beating until combined. Add m and ms and mix a couple more times on low to incorporate.
Use a cookie scoop or spoon to scoop cookie dough 2 inches apart onto parchment-lined baking sheet. Smoosh cookies down with the back of the spoon. Place 3 mms on top or sprinkle crushed peppermint candies over top if desired.
Bake for 8 to 10 minutes. I bake them for 9 and they still look VERY soft but firm up as they cool. Allow to rest for a couple minutes before transferring to a wire rack to cool completely.
