These mushrooms would make a fantastic Thanksgiving or Christmas side dish, as they're perfect at room temperature. For an easy dinner, spread ricotta on a great slice of toast and pile these mushrooms high on top.
RECIPE: ROASTED ROSEMARY MUSHROOMS
1 pound mixed mushrooms
¼ cup olive oil
6 sprigs rosemary
¼ teaspoon salt
1/8 teaspoon freshly cracked black pepper
Preheat oven to 400°.
Place all ingredients on a baking sheet and toss to combine. Spread evenly on baking sheet.
Roast for 25-30 minutes, stirring occasionally until tender and just starting to crisp.
Remove from oven and discard all but one sprig of rosemary. Transfer mushrooms to a serving platter and garnish with rosemary. Serve warm or at room temperature.
