My husband and I are moving in two weeks, so we have been on a major "clear the refrigerator" initiative - resulting in all kinds of unseemly combinations such as gochujang in our scrambled eggs, hoisin in our soup, and black sesame seeds on everything (maybe I didn't need that jumbo bottle after all).
This Smashed Pea + Tahini toast is one of those dishes that only occurs when your fridge is sparse, you refuse to go grocery shopping, and you are starving. But the tahini and peas work together so perfectly that I've made the dish three times this week alone. Frozen peas are defrosted and mashed together with the tahini, a bit of lemon juice and a few spices, then smeared on a good piece of toasted bread. I've topped mine here with a slow fried egg and pea shoots (since I had them on hand), but it's delicious all on it's own as well.
Smashed Pea+Tahini Toast with a Slow Fried Egg
2 slices of good bread
1 clove garlic, peeled
1 cup frozen peas
1 tbsp tahini paste
Juice from 1/2 lemon
Salt and pepper to taste
1 teaspoon olive oil
2 large eggs
1 tablespoon cilantro, chopped
Toast bread to your liking. Before it cools, rub it with the clove of garlic.
Meanwhile, defrost peas in a small bowl. Add tahini, lemon juice and paprika and smash with the back of a fork. Season to taste with salt and pepper.
Heat oil in a large frying pan over low heat for 3-5 minutes. Add two eggs and cover for 3-4 minutes, or until the whites have set but the yolk is still runny.
To assemble, divide the peas amongst the two pieces of toast, top with pea shoots (if you have them) and one fried egg each. Season with salt and pepper, sprinkle with cilantro and enjoy immediately.
